Ingredients

2 medium zucchini (about 10 oz/300 g)
1 sweet red pepper, cored, stemmed and halved
1/4 cup (50 mL) PC Mediterranean Vinaigrette
2 PC Thick & Juicy Vegetarian Portobello Swiss Burgers
2 sprigs rosemary

Instructions

  1. Preheat barbecue to medium heat.
  2. Slice zucchini on diagonal into 1/4-inch (5 mm) thick slices. In bowl, toss zucchini, red pepper and vinaigrette.
  3. Place burgers and vegetables on greased grill. Cook vegetables for 4 to 5 minutes per side or until tender. Cook burgers for 4 to 5 minutes per side or until done.
  4. Place burgers on plate. Top each burger with half a red pepper and half of the zucchini. Spear rosemary sprig through vegetables and burger, and serve.  Serve with PC Gigantico Whole Wheat Burger Buns, if desired.
