Developed to perfectly set off our butterflied shrimp, this creamy dip combines all the flavours of Thailand- coconut, hot pepper and coriander. Try with spring rolls or fresh rolls, too!

¼ cup (50 mL) unsweetened medium coconut
2 tsp (10 mL) PC Memories of Thailand Fiery Chili Pepper Sauce
½ cup (125 mL) canned coconut milk
2 tbsp (25 mL) chopped fresh coriander


1. In dry frying pan set over medium heat, cook coconut until golden and fragrant, stirring often, about 4 minutes.
2. In bowl, stir together coconut, Memories sauce, coconut milk and coriander. Serve with PC Butterflied Shrimp.
