1 tbsp (15 mL) fresh lemon juice
1/2 cup (125 mL) PC Sliced Sweet Roasted Red Peppers drained
1/4 cup (50 mL) PC Blue Menu Light Mayonnaise Type Dressing
1 pkg (454 g) PC Organics Baby-Cut Carrots
1 pkg (200 g) PC Blue Menu Ancient Grains Snack Cracker
1 small clove garlic, peeled
1 pkg (250 g) no name Spreadable Light Cream Cheese


  1. Turn food processor on. Add garlic clove through feed tube and process until minced. Turn machine off. Add cream cheese, red peppers, spread and lemon juice; process until very smooth, about 1 minute. Portion into individual plastic containers, about a scant 1/4 cup (50 mL) dip per portion. Refrigerate for up to 4 days.
  2. For each lunch, pack one portion of dip with 8 carrots and 10 crackers.


Chef's Tips

Instead of carrots and crackers, try using celery sticks, sliced apples or whole wheat pita crisps.
