1 cup (250 mL) PC Organics Whole Wheat flour
3/4 cup (175 mL) PC Blue Menu Natural Wheat Bran
1 cup (250 mL) PC Organics Applesauce - Unsweetened
1/2 cup (125 mL) PC Blue Menu Finesse Plain Yogurt
2 tbsp (25 mL) PC 100% Pure Safflower Oil
1/2 cup (125 mL) brown sugar (not packed)
2 tsp (10 mL) no name Cinnamon
1 tsp (5 mL) baking powder
1 tsp (5 mL) baking soda
1 egg, lightly beaten


  1. Preheat oven to 375°F (190°C). Spray 8 X 4-inch (1.5 L) loaf pan with PC Blue Menu Canola Oil Cooking Spray.
  2. In large bowl, whisk together flour, bran, brown sugar, cinnamon, baking powder and baking soda. In another bowl and using a wooden spoon, stir together egg, applesauce, yogurt and oil; stir into bran mixture just until moistened. Do not overmix. Pour batter into prepared loaf pan.
  3. Bake in centre of oven for 35 to 40 minutes or until tester inserted in centre comes out clean. Cool in pan on wire rack for 10 minutes. Remove from pan to cool fully.

Chef's Tips

Serve with PC Blue Menu Celeb Margarine- Original, if desired.

Add 1/2 cup (125 mL) golden raisins at the same time as brown sugar, if desired.
