Throw a handful of frozen raspberries into our chocolate bran muffin mix to mix it up a little- no need to thaw them first.

1/2 cup (125 mL) PC Red Raspberries Whole
1-1/2 cups (375 mL) PC Blue Menu Dark Chocolate Bran Muffin Mix
1/2 cup (125 mL) water
1-1/2 tsp (7 mL) canola oil
1 egg white


1. Preheat oven to 375°F (190°C). Spray PC Home Mini Muffin Pan with PC Blue Menu Canola Oil Cooking Spray.
2. In bowl, stir together raspberries, water, oil and egg white, stirring well to break up berries. Add muffin mix; stir until combined. Place 1 generous tbsp in each cup of mini muffin pan.
3. Bake in centre of oven for 10 to 12 minutes or until tester inserted in centre comes out clean. Makes 24 mini muffins.
