Cupcakes are a hot trend right now, and not just for kids. PC Lemon Poppyseed Coffee Cake Mix is a great shortcut. Be sure to put the jam on top of the streusel mix, otherwise it will sink to the bottom.

Instructions

  1. Preheat oven to 400° F (200° C). Line a 12-cup muffin pan with paper liners.
  2. Empty streusel mix from coffee cake package into a small plastic bag. Add butter. Rub and press contents together in bag until mixture is uniformly blended and forms a ball when pressed.
  3. In large bowl, combine cake mix, eggs, water and oil. With electric mixer, beat on low speed until moistened. Increase speed to medium-low; beat one minute longer. Divide batter among prepared muffin cups. Sprinkle with streusel mix. Spoon 1/2 tsp (2 mL) jam on top of each streusel-topped cupcake.
  4. Bake in centre of oven for 17 to 20 minutes or until top springs back when gently pressed. Remove cupcakes from pan. Cool on wire rack.

 

Chef's Tips

Wrap individually and freeze. Pop into a lunchbox in the morning for a lunchtime treat.
