1 box (460 g) PC Organics Cake Mix - Vanilla
1/2 cup (125 mL) PC 100% Pure Safflower Oil
3 eggs
2/3 cup (150 mL) 2% milk
Yellow liquid food colouring
Blue liquid food colouring
Half 450 g tub no name Vanilla Creamy Frosting


  1. Preheat oven to 350°F (180°C). Line 12-cup muffin tin with jumbo paper cupcake liners.
  2. In bowl and using electric mixer set on low speed, combine cake mix, eggs, milk and oil until combined. Add 15 drops yellow food colouring and 8 drops blue food colouring. Beat at medium-high for 2 minutes. Scrape down beaters and side of bowl. Beat on medium-high another 2 minutes. Divide among prepared muffin cups, filling no more than 3/4 full.
  3. Bake in centre of oven for 20 to 22 minutes or until tester inserted in centre comes out clean. Cool in pan on wire rack for 5 minutes. Remove from pan. Cool to room temperature.
  4. Add 20 drops yellow food colouring and 2 drops blue food colouring to frosting. Using electric mixer, beat on medium speed for 45 to 60 seconds or until evenly coloured. Spread over tops of cupcakes. Decorate with green candy sprinkles and gold-wrapped coins, if desired.
