These open-faced breakfast sandwiches are low in fat and take only minutes to prepare. Any ripe tomato can be used instead of grape tomatoes, just cut them into a medium dice. Be sure to serve immediately so the cheese is nice and gooey!

8 grape tomatoes, quartered
2 PC Blue Menu Whole Wheat English Muffins
2 tsp (10 mL) PC Horseradish Dijon
2 slices PC Blue Menu Sliced Low Fat Provolone Cheese, cut in half
3 slices PC Blue Menu Extra Lean Stone Roasted Ham

Instructions

  1. Preheat oven to 350°F (180°C). Line baking sheet with parchment paper.
  2. Cut ham into ¾-inch (2 cm) squares; in small bowl toss with tomatoes. Spread cut sides of muffins evenly with Dijon and place on prepared baking sheet. Mound ham mixture on each muffin half, dividing evenly. Top each with a half slice of cheese.
  3. Bake in centre of oven for 8 to 10 minutes or until cheese melts.
