Hand-held food is always popular with kids. The raisin-peanut-carrot combination is slightly sweet, but it’s also nutritious as well!

4 PC Blue Menu Air Chilled Boneless, Skinless Chicken Breasts
1/2 cup (125 mL) PC Blue Menu MEMORIES OF Szechwan Spicy Peanut Satay Sauce
8 large whole wheat tortillas
1 cup (250 mL) shredded carrots
1/3 cup (75 mL) raisins
4 lettuce leaves, torn in half


  1. Preheat barbecue to medium-high heat.
  2. Place chicken on greased grill. Cook with lid up for 4 to 6 minutes per side or until cooked through. Remove from grill. Cool slightly.
  3. Slice chicken breasts thinly. In bowl, stir together chicken and Memories sauce.
  4. Place tortillas on grill. Cook for 30 seconds per side or until warmed. Remove from grill. Divide chicken mixture evenly among tortillas, placing in centre. Top chicken evenly with carrots, raisins and lettuce. Fold tortillas and serve.


Chef's Tips

If your kids don’t like raisins, substitute an equal amount of shredded apple.
