Ingredients

1 lb (500 g) PC Blue Menu Air Chilled Boneless, Skinless Chicken Breasts
1/2 cup (125 mL) PC Mediterranean Vinaigrette
7 slices PC Bacon - Fully Cooked
1 head Boston lettuce, leaves separated, washed and dried
2 ripe tomatoes, sliced
1/4 cup (50 mL) PC Mediterranean Vinaigrette

Instructions

  1. Preheat barbecue to medium heat.
  2. Place chicken in shallow glass baking dish; pour 1/2 cup (125 mL) vinaigrette over chicken, turning chicken to coat. Cover with plastic wrap and let stand at room temperature for 10 minutes. Heat bacon in microwave on HIGH for 30 to 40 seconds; drain on paper towel.
  3. Lift chicken out of marinade and place on greased grill, discarding marinade remaining in dish. Close lid. Cook for 8 minutes. Turn chicken. Close lid and cook for 5 to 7 minutes longer or until cooked though. Place chicken on cutting board and let stand for 5 minutes. Meanwhile, arrange lettuce on platter, layer tomatoes slices over lettuce and drizzle with remaining 1/4 cup (50 mL) vinaigrette.
  4. Slice chicken thinly on diagonal into 1/2-inch (1 cm) strips. Place on top of tomatoes. Tear bacon into bite-sized pieces and sprinkle over salad.

Chef's Tips

You can use a zippered plastic bag to marinate chicken if you prefer; remove chicken from bag and throw away bag, marinade and all.
