Popovers have a crisp golden crust, and are moist and a bit hollow on the inside, making them ideal for splitting and filling. Here we use leftovers from turkey dinner.

Ingredients

1 cup (250 mL) PC Organics All Purpose Flour - Unbleached
½ tsp (2 mL) salt
2 eggs
1 1/4 cups (300 mL) 2% milk
1 can (540 mL) PC Cream of Mushroom Ready To Serve Soup
2 cups (500 mL) chopped cooked turkey
1 tsp (5 mL) no name Curry Powder
1 tsp (5 mL) fresh lemon juice
2 cups (500 mL) cooked green beans, reheated

Instructions

  1. Preheat oven to 450°F (230°C). Spray cups of popover pan lightly with PC Canola Oil Cooking Spray.
  2. In large bowl, whisk together flour and salt. In another bowl, whisk together eggs and milk; pour over flour mixture and whisk just until blended. Do not over mix; mixture should be slightly lumpy. Fill prepared popover cups. Place popover pan on baking sheet.
  3. Bake in centre of oven for 15 minutes. Do not open oven door or popovers will fall. Reduce oven temperature to 350°F (180°C); bake for another 20 minutes or until golden brown. Remove from oven and invert onto wire rack.
  4. In saucepan, heat soup. Add turkey, curry powder and lemon juice; heat thoroughly.
  5. Cut popovers in half horizontally. Place bases in bottom of six shallow bowls. Top each with a spoonful of turkey mixture and several green beans. Top with popover tops.

Chef's Tips

Use peas, carrots, Brussels sprouts - any leftover cooked vegetable you have leftover - in place of green beans.
