6 cups (1.5 L) PC Blue Menu Fortified Soy Beverage - Vanilla
1 cup (250 mL) PC Organics Long Grain White Rice
1/2 tsp (2 mL) cinnamon
1/4 tsp (1 mL) salt
1/3 cup (75 mL) PC Blue Menu Twice The Fruit Spread - Apricot


  1. In heavy-bottomed saucepan, bring 5 cups (1.25 L) of soy beverage to a boil. Stir in rice, cinnamon and salt. Return to a boil. Reduce heat to medium-low. Simmer, uncovered, for 30 to 35 minutes, stirring frequently. Remove from heat.
  2. Stir in remaining soy beverage. Spoon into serving dishes. Top each serving with a dollop of spread.

Chef's Tips

Substitute another PC Blue Menu Twice the Fruit Fruit Spread.
