24 PC Raw Peeled Pacific White Shrimp , thawed
1 pkg (400 g) PC Blue Menu Wild Nova Scotian Frozen Sea Scallops , thawed
2 green onions, finely chopped
4 tbsp (60 mL) PC Spicy Herb & Pepper Olive Oil
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) freshly ground black pepper
Half lemon, cut in 4 wedges

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut four 12-inch (30 cm) lengths heavy-duty foil. Place on work surface. Divide shrimp, scallops and green onions evenly among pieces of foil. Drizzle each with 1 tbsp (15 mL) olive oil. Sprinkle with salt and pepper. Fold two opposite sides of foil up to meet on top of seafood mixture; fold edges together securely. Fold remaining two short ends of packets up to close package securely. Place packages on rimmed baking sheet.
  3. Bake in centre of oven for 15 minutes. Open packets carefully. Transfer contents of each packet, including juices, to a dinner plate and squeeze a lemon wedge over each serving.

Chef's Tips

Serve with steamed green beans, and roasted potatoes to soak up juices in packets: Scrub and quarter 1 lb (500 g) potatoes, toss with 3 tbsp (45 mL) PC Splendido Extra Virgin Olive Oil and 1/2 tsp (2 mL) each salt and pepper, spread on rimmed baking sheet and bake in 400°F (200°C) oven for 45 minutes or until tender.
