1 can (284 g) PC Blue Menu Seasoned Chunk Turkey Breast drained
1/4 cup (50 mL) diced celery
1/4 cup finely diced red onion
2 tbsp (25 mL) PC Blue Menu Light Mayonnaise Type Dressing
2 tbsp (25 mL) fresh parsley chopped
1 1/2 tsp (7 mL) fresh lemon juice
1/4 tsp freshly ground black pepper
8 slices PC Blue Menu Multigrain Flax Loaf


  1. In bowl, stir together turkey, celery, red onions, dressing, parsley, lemon juice and pepper.
  2. Place 1/2 cup (125 mL) filling on each of four slices bread; spread to edges. Top with remaining four slices bread.

Chef's Tips

Curried Turkey Salad Sandwich variation: Add a pinch of curry powder.
