Ingredients

2/3 cup (150 mL) PC 0% Greek Yogurt- Plain
1/4 cup (50 mL) PC Blue Menu Twice the Fruit Mango Spread
2 tbsp (25 mL) chopped fresh coriander
2 tsp (10 mL) curry powder
ΒΌ tsp (1 mL) salt

Instructions

  1. In bowl, stir together yogurt, curry powder, mango spread, coriander and salt. Makes scant 1 cup (250 mL), enough for about 2-1/2 lb (1.25 kg) poultry, shrimp or pork.
  2. Use to marinate chicken, shrimp or pork before barbecuing or broiling. Place chosen meat in glass baking dish; pour marinade over and turn meat to coat. Cover with plastic wrap and marinate in refrigerator for at least 20 minutes or up to overnight. Marinate meat longer, fish shorter time. Discard any marinade left over in dish after marinating raw meat.
