You can serve this easy-to-pack sandwich to the kids and yourself. If packing in a lunch box, add an ice pack to keep sandwich chilled.

Ingredients

4 English muffins, split in half
1/4 cup (50 mL) PC Blue Menu Light Mayonnaise Type Dressing
4 slices PC Oven Roasted Turkey Breast - Extra Lean
1/2 cup (125 mL) baby spinach leaves

Instructions

  1. Split muffins. Spread cut sides with mayonnaise. Top four of the halves with a slice of turkey and some spinach leaves. Place tops on muffins. Serve with cherry tomatoes and carrot sticks, if desired.

Chef's Tips

If planning to serve immediately after making, toast muffins before spreading with mayo.
