Ingredients

1/2 cup (125 mL) PC The Decadent Semi-Sweet Chocolate Chips
1 pkg (485 g) PC Sour Cream Coffee Cake Mix with Chocolate-Cinnamon Streusel
1/3 cup (75 mL) PC 100% Pure Safflower Oil
1 tbsp (15 mL) butter, softened
2/3 cup (150 mL) water
2 eggs
3 bananas

Instructions

  1. Preheat oven to 350°F (180°C). Grease 12 muffin cups or line with paper baking cups.
  2. Empty streusel mix into small plastic bag. Add butter. Rub and press contents together in bag until mixture is uniformly blended and forms a ball when pressed. Set aside.
  3. In large bowl and using electric mixer on low speed, combine cake mix, water, oil and eggs until moistened. Increase speed to medium-low and beat 1 minute longer. Mash two of the bananas; stir into batter along with chocolate chips. Divide among prepared muffin cups. Sprinkle with streusel topping. Slice remaining banana into 12 slices; place one slice of top of each muffin.
  4. Bake in centre of oven for 20 to 25 minutes or until tester inserted in centre comes out clean.

Chef's Tips

Wrap muffins individually and freeze for up to 1 month. Try eating them frozen for a treat on a hot day!
