1 jar (400 mL) PC Thai Green Curry Cooking Sauce
4 carrots, thinly sliced
2 sweet red peppers, thinly sliced
2 green onions, cut in 1-inch (2.5 cm) lengths
2 pkg (each 280 g) PC Blue Menu Wild Pacific Halibut Skinless Fillets , thawed


  1. Place sauce in 10-inch (25 cm) frying pan. Bring to a boil. Boil 2 minutes. Add carrots, red peppers and green onions to pan; cook over medium heat until tender-crisp, about 4 to 5 minutes. 
  2. Add halibut, making sure fish is covered by sauce and vegetables. Reduce heat to low, cover and cook 5 to 7 minutes or until fish flakes easily when prodded with a fork.
  3. Serve garnished with lime wedges and additional sliced green onion, if desired.


Chef's Tips

PC Thai Green Curry Cooking Sauce has a 2-chili heat rating. Vary the heat in this recipe by substituting PC Thai Red Curry Cooking Sauce with a 3-chili heat rating, or PC Thai Yellow Curry Cooking Sauce with a 1-chili heat rating.
