Ingredients

12 PC Golden Little Gems Yellow Mini Potatoes halved, lengthwise
1 tsp (5 mL) olive oil
½ cup (125 mL) PC Homestyle Cooked Ham
1/3 cup (75 mL) lightly packed grated Gruyere cheese
1 tbsp (15 mL) finely chopped green onion
1 tbsp (15 mL) finely chopped cornichon or sour dill pickle
3 tbsp (45 mL) PC Blue Menu Light Mayonnaise Type Dressing

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut thin slice from bottom of potato halves so they will sit flat. Toss potatoes with olive oil. Stand on baking sheet. Sprinkle tops with Gruyere. Bake in centre of oven until crispy and golden, about 35 to 40 minutes. Set aside to cool.
  3. In bowl, stir together ham, onion, cornichons and mayonnaise. Divide mixture among potato halves. Serve garnished with chives, if desired.
