You’re likely familiar with caprese salad, a bocconcini, basil and tomato combo. We’ve taken those wonderful flavours and stuffed them into our Italian ciabatta buns for a very tasty mini sandwich.

Ingredients

1/2 cup (125 mL) mayonnaise
1 pkg (40 g) PC Fresh Basil chopped
1/4 cup (50 mL) PC Sliced Sun-Dried Tomatoes in Seasoned Oil drained and minced
1 bag (500 g) PC Mini Ciabatta Sausage Pre-Sliced Buns
2 balls fresh mozzarella (about 500 g), cut in 18 slices
1 pkg (397 g) PC Sweet Cocktail Tomatoes on the Vine stemmed and cut in 18 slices
1/8 tsp (0.5 mL) cracked black pepper

Instructions

  1. Preheat oven to 375°F (190°C). In small bowl, stir together mayonnaise, basil and sundried tomatoes; set aside.
  2. Place buns on baking sheet. Bake in centre of oven for 1 to 2 minutes or until warmed through.
  3. Divide mayonnaise mixture among warm buns, spreading over both cut sides. Add a slice of mozzarella, a slice of tomato and a pinch of pepper to each bun and serve immediately.
