This classic Italian dish takes very little time to prepare. It’s kid-friendly, too, with no obvious vegetables to pick out at the table.

1 tbsp (15 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
1 pkg (150 g) PC Italian Diced Pancetta
1 1/2 cups (375 mL) grated PC Splendido Parmigiano Reggiano about 110 g
1 pkg (450 g) PC Splendido Spaghetti
1 onion, chopped
1/4 cup (50 mL) 35% whipping cream
4 eggs
1/4 tsp (1 mL) freshly ground black pepper

Instructions

  1. In large nonstick frying pan, heat oil over medium heat; cook pancetta until fat begins to render, about 2 to 3 minutes. Stir in onion; cook, stirring occasionally, until golden and soft, about 10 to 12 minutes. Reduce heat to minimum. Cover pan.
  2. In bowl, whisk together cream, eggs, Parmesan and pepper. Set aside.
  3. In large saucepan of boiling, salted water, cook spaghetti for 10 to 11 minutes or until tender but firm. Drain. Return to saucepan. Off heat, add pancetta mixture; toss to coat. Add cream mixture to pasta; toss to coat. Serve immediately, with additional Parmesan and sprinkled with chopped fresh parsley, if desired.
