Sure to be the summer’s favourite salad, this is great alongside burgers, ribs, chicken and steak.

Ingredients

1 can (19 oz/540 mL) PC Blue Menu Black Beans , rinsed and drained
1 can (341 mL) PC Blue Menu Peaches & Cream Whole Kernel Corn , drained
Half sweet yellow pepper, diced
1 ripe mango, diced
1/4 cup (50 mL) chopped fresh coriander
1/2 cup (125 mL) PC Smokin' Stampede Tequila Habanero Barbecue Sauce Naturally Flavoured
1/4 cup (50 mL) thinly sliced green onions
Juice of 1 lime
8 PC Crispy Lettuce Wraps

Instructions

  1. In large bowl, stir together beans, corn, peppers, onions, mango, coriander, barbecue sauce and lime juice. Place 2/3 cup (150 mL) in each crispy wrap. Serve immediately.

 

Chef's Tips

This salad also makes a great buffet dish- let everyone fill her own crispy wrap.

Serve right after making this- it loses flavour as it stands.
