Sweet potatoes are a nutritional powerhouse, full of fibre and vitamins A and C. Serve our loaded version in place of fries, with chicken fingers, burgers or almost any other main.

2 sweet potatoes (about 990 g), scrubbed
4 tsp (20 mL) olive oil
1/4 tsp (1 mL) salt
1-1/3 cups (325 mL) PC Blue Menu Light Triple Cheddar Shredded Cheese
3/4 cup (175 mL) PC 0% Greek Yogurt- Plain
2 green onions, finely chopped


  1. Preheat oven to 425°F (220°C). Prick sweet potatoes all over with a fork. Place on paper towel. Microwave on HIGH until tender when pierced, about 5 minutes. Let stand until cool enough to handle.
  2. Cut potatoes into wedges; place skin side up in 8-inch (2 L) square glass baking dish. Brush wedges with oil; sprinkle with salt.
  3. Bake in centre of oven until slightly crisp, about 10 minutes. Cover with cheese; bake until melted, about 8 minutes.
  4. Serve dolloped with yogurt and sprinkled with green onions.
