20 squares PC Extra Dark Chocolate (4 rows), chopped
16 strawberries unhulled, clean and dry


  1. Place chopped chocolate in heatproof bowl.
  2. Bring saucepan of water to a boil; remove from heat. Set bowl with chocolate over (not in) hot water. (Water should not touch bottom of bowl). Let stand for 5 minutes, stirring occasionally, or until melted.
  3. One at a time, dip back half of strawberries into melted chocolate. Then dip two sides of each berry, leaving front one-quarter plain. Place strawberries chocolate-side down on waxed paper-lined baking sheet.
  4. Transfer remaining melted chocolate to small resealable plastic bag. With scissors, snip off the tip (just barely, to make the size of a pinhole) from one corner of bag to make a piping bag. Pipe a little bow tie on plain side of strawberry directly beneath leaves, then pipe two or three buttons below. Let strawberries stand in cool place (not refrigerator) for about one hour, or until chocolate has set.


Chef's Tips

For variety, dip only the back half of strawberries into melted chocolate. Pipe parallel lines across the plain sides, then pipe a second set of lines at an angle to the first to make a lattice pattern as in photo.
