    Thumbprint cookies are a classic holiday cookie that you can enjoy year-round. Often made with almonds or walnuts, we’ve used pistachios in this easy version that uses our cookie mix as a base. Get the kids to help by making indentations in the cookie dough. Store baked cookies in an airtight container; fill with jam just before serving.

    You need to make really strong coffee so they flavour comes through in the squares. Medjool dates and honey dates sold in the produce department are soft and easier to chop than baking dates packed in blocks, but you will have to pit them. Enjoy with a cup of coffee.
