1 bag (270 g) PC Mini Fudge Melts
1 pkg (500 g) PC Belgian Chocolate Square Baking Mix
1-1/2 cup (375 mL) vegetable oil
2 eggs
1/3 cup (75 mL) water


  1. Preheat oven to 350°F (180°C). Butter an 8-inch (2 L) square metal cake pan and line with parchment paper. Grease paper.
  2. Set aside 1/3 cup (75 mL) of fudge melts. In large bowl, combine baking mix, eggs, oil and water. Using electric mixer, beat on low speed for 1 minute. Scrape the side of the bowl and beat on medium speed for 4 minutes. Stir in remaining fudge melts. Scrape batter into prepared pan and smooth the top. Set aside chocolate discs from cake mix.
  3. Bake on middle oven rack for 30 to 40 minutes or until toothpick inserted in centre comes out clean. Cool in pan on wire rack for 15 minutes. Using parchment paper, lift cake out onto wire rack to cool completely, about 45 minutes.
  4. Cut into 36 squares. Set on serving platter. Place chocolate discs in heatproof bowl over (not in) saucepan of simmering water. Stir to melt chocolate. Pour chocolate into a small resealable plastic bag. Cut off a tiny corner and drizzle chocolate over squares. Top each square with three of reserved fudge melts.
