A lovely pick-me-up after an afternoon skating, biking or jogging. Try with a cup of hot chocolate in the winter months! Ground almonds provide 0.84 g omega 6 per cookie.

1/2 cup (125 mL) PC Organics All Purpose Flour - Unbleached
2/3 cup (150 mL) PC Blue Menu Twice The Fruit Spread - Apricot
2 eggs
1 pkg (100 g) no name Ground Almonds
1/2 cup (125 mL) granulated sugar
1 tsp (5 mL) baking powder


  1. Preheat oven to 400°F (200°C). Spray 8-inch (2 L) square glass baking dish with PC Blue Menu Canola Oil Cooking Spray.
  2. In large bowl, beat eggs together. In another bowl and using wooden spoon, stir together almonds, sugar, flour and baking powder. Fold mixture into beaten eggs. Stir in apricot spread. Pour into prepared baking dish.
  3. Bake in centre of oven for 20 minutes. Cool in baking dish for 20 minutes. Run knife between dish and cake around edges; gently turn cake out of dish onto plate then transfer to cutting board. Cut in half crosswise, then cut each half into eight 1 X 4 inch (2.5 X 10 cm) fingers. Place cut-side-down on baking sheet. Bake for 10 to 15 minutes longer, turning halfway, or until golden.


Chef's Tips

Substitute Blue Menu jam for another flavour- try peach passionfruit.
