1 tbsp (15 mL) PC 100% Pure Safflower Oil
1 zucchini - cut in bite-sized pieces
1 onion - cut in bite-sized pieces
1 sweet red pepper - cut in bite-sized pieces
1/4 tsp salt & freshly ground black pepper
1 pkg (350 g) PC Blue Menu Extra Firm Tofu drained and cut in bite-sized pieces
1 bottle (400 mL) PC Indian Korma Cooking Sauce


  1. In large frying pan, heat oil over medium-high heat; cook zucchini, onions and peppers for 2 to 3 minutes, stirring constantly, or until lightly browned. Sprinkle with salt and pepper. Add tofu; cook for 1 to 2 minutes, stirring. Add korma sauce. Reduce heat to medium. Simmer for 4 to 5 minutes or until mixture is hot and vegetables are tender.
  2. Serve over cooked PC Basmati Rice, if desired.
