We named this lightning because you can make it a flash! In the true Italian manner, the dish is sparsely sauced keeping the emphasis on the pasta. Buy a bag of prewashed baby spinach to keep the preparation time down.

Pinch salt
1 pkg (450 g) PC Splendido Linguine
2 tbsp (25 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
1 can (398 mL) PC Splendido Whole Cherry Tomatoes
1 pkg (200 g) PC Brebis crumbled
1 tbsp (15 mL) minced garlic
5 cups (1.25 L) packed baby spinach leaves
1/4 tsp (1 mL) granulated sugar

Instructions

  1. In large saucepan of boiling, salted water, cook linguine for 10 minutes or until tender but firm.
  2. Meanwhile, in large frying pan, heat oil over medium heat; cook garlic for 1 minute or until fragrant. Stir in spinach and salt; cook 2 to 3 minutes or until wilted and liquid has evaporated. Add tomatoes and their juices and sugar; cook for 3 to 4 minutes or until slightly thickened.
  3. Drain linguine. Add to vegetable mixture; toss well. Divide among five warmed bowls. Top each portion with some crumbled cheese.

Chef's Tips

Grind a little PC Salad & Vegetable Seasoning Grinder on after you add the crumbled cheese, if you like.
