Tomato, feta and shrimp are a classic Mediterranean combo. Our version, served over cooked brown rice (already cooked for you!), is easy enough to make on a weeknight after work.

Ingredients

1 tbsp (15 mL) olive oil
2 small zucchini, cut in ½-inch (1 cm) pieces (about 3 cups/750 mL)
1 tbsp (15 mL) cloves garlic, minced
1-1/2 cups (375 mL) PC Blue Menu Tomato & Basil
1 tsp (5 mL) finely grated lemon rind
1 pkg (454 g) frozen raw zipperback shrimp, thawed, peeled and patted dry
1 pouch (283 g) PC Cooked Whole Grain Brown Rice Sides
1/2 cup (125 mL) crumbled light feta cheese
1/4 cup (50 mL) chopped fresh parsley

Instructions

  1. In large frying pan, heat oil over medium heat; cook zucchini, stirring often, for 3 minutes or until slightly tender. Add garlic; cook 30 seconds. Stir in pasta sauce and lemon rind; cook for about 2 minutes or until sauce is hot and bubbling. Stir in shrimp; cook for 3 to 4 minutes, turning shrimp halfway, or until shrimp is cooked through.
  2. Meanwhile, place rice pouch in microwave on a paper towel, seam side up; cook on HIGH for 3 minutes. Let stand for 2 minutes.
  3. Serve shrimp and sauce over rice, sprinkled with feta and parsley.
