1 tomato, diced
1/2 cup (125 mL) grated PC Splendido Parmigiano Reggiano
1 (300 g) PC Stone-Baked Flatbread
2 tbsp (25 mL) PC Roasted Garlic Olive Oil
1 cup (250 mL) PC Splendido Shredded Part Skim Stretched Mozzarella Cheese
1 1/2 tsp (7 mL) coarsely chopped fresh rosemary


  1. Preheat barbecue to medium heat.
  2. Brush both sides of flatbread with oil. Place flatbread on grill; cook 3 minutes or until flatbread is grill-marked.
  3. Remove flatbread from grill. Turn grilled side up. Sprinkle with mozzarella and tomato. Place on grill. Close lid and cook for 3 minutes or until cheese is melted. Remove from grill. Sprinkle with Parmesan and rosemary.

Chef's Tips

Instead of barbecuing, preheat oven to 400°F (200°C). Brush oil over one side of flatbread; place on baking sheet oil side up. Top with mozzarella and tomato. Bake in centre of oven for 10 minutes. Remove from oven; sprinkle with Parmesan and rosemary.
