1/2 cup (125 mL) PC Toasted Sesame Vinaigrette
2 centre-cut boneless pork chops (about 1lb/500 g)
2 tbsp (25 mL) PC Fresh Churned Butter - Unsalted
1/2 sliced onion
1 Granny Smith apple peeled and chopped
4 cups (1 L) arugula


  1. In shallow glass baking dish, pour 1/4 cup (50 mL) of the sesame vinaigrette over pork chops; turn to coat. Cover and let marinate at room temperature for up to 30 minutes, or until barbecue is preheated to medium-high.
  2. Place pork on greased grill, discarding any vinaigrette left in dish. Close lid. Cook over medium-high for 6 minutes per side or until juices run clear.
  3. Meanwhile, in frying pan, melt butter over medium-high heat; cook onion for 3 to 5 minutes or until softened. Stir in apple; cook for 5 minutes, stirring occasionally, or until apple and onion are tender. Stir in remaining sesame vinaigrette. Bring to a boil. Remove from heat.
  4. Divide arugula among four dinner plates. Slice pork thinly across the grain; fan pork slices out on top of arugula, dividing evenly among plates. Spoon warm sesame-apple dressing over top. Serve immediately.

Chef's Tips

If arugula is difficult to find, substitute spinach.
