A super, Indian-influenced dish that you can make on a busy weeknight. The sauce is made, the veggies are chopped, all you have to do is chop some chicken and stir it together. You’ll want to serve rice to soak up all the delicious sauce.

1 lb (500 g) PC Blue Menu Air Chilled Chicken Thighs - Boneless, Skinless
1 jar (400 mL) PC Indian Butter Chicken Cooking Sauce
2 cups (500 mL) no name Frozen Broccoli & Cauliflower Winter Vegetables


  1. Preheat oven to 425° F (220° C).
  2. Cut chicken thighs into 1-inch (2.5 cm) cubes. In 8-inch (2 L) square baking dish, stir together chicken, cooking sauce and vegetable mix.
  3. Bake uncovered in centre of oven for 35 to 40 minutes or until chicken is cooked through.
