1 cup (250 mL) PC Cranberry Stuffing Mix
1 cup (250 mL) cold water
2 lb (1 kg) lean ground chicken
2 tbsp (25 mL) PC Horseradish Dijon
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) freshly ground black pepper
2 tbsp (25 mL) PC Tomato Ketchup
2 tbsp (25 mL) PC Steak Sauce


  1. Preheat oven to 350°F (180°C). Grease 9 X 5-inch (2 L) loaf pan.
  2. In large bowl, stir together stuffing mix and water. Let stand 5 to 10 minutes or until water is absorbed. Stir in ground chicken, mustard, salt and pepper. Press into prepared pan. Stir together ketchup and steak sauce; brush over chicken mixture.
  3. Bake in centre of oven for 55 to 60 minutes on until internal temperature reads 175°F (80°C) on a meat thermometer. Let rest 10 minutes in pan before slicing. Pour off any extra liquid in pan. Serve with PC Tomato Ketchup, if desired.

Serve sliced leftovers cold in a sandwich.
