Developed to be cooked at the same time as the PC Easy-Carve Leg of Lamb, these roasted onions should go on the oven rack right under the roast. If you are cooking them on their own without the lamb roast, start oven at 325°F (160°C) and increase cooking time to about 2 hours.

6 PC Sweet Onions
1 tbsp (15 mL) balsamic vinegar
1 tbsp ( 15 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
¼ tsp (1 ml) salt
1/8 tsp (0.5 ml) freshly ground black pepper


  1. Preheat oven to 450°F (230°C). Spray13 X 9-inch (3 L) glass baking dish with cooking spray.
  2. Peel onions and halve crosswise. Place in prepared dish, cut side up. Pour in 1/2 cup (125 mL) water. In small bowl, stir together balsamic vinegar, olive oil, salt and pepper; brush half of mixture over cut sides of onions.
  3. Place in oven. Immediately reduce oven temperature to 325°F (160°C). Bake for 45 minutes. Brush with remaining vinegar mixture; bake another 45 minutes or until tender.
