Scalloped potatoes are an all-time favourite. Sweet and white potatoes combine in this update of a dish that’s usually high in fat. We used stock instead of cream to reduce the fat.

Ingredients

4 cups (1L) low sodium chicken stock
30 PC Blue Menu Snack Crackers Wheat & Onion
1 tbsp (15 mL) PC Blue Menu Celeb Margarine - Original
1 tbsp (15 mL) PC Organics All Purpose Flour - Unbleached
2 baking potatoes (about 1 lb/500 g), peeled and sliced
3 green onions - sliced
2 small sweet potatoes (about 12 oz/375 g), peeled and sliced
1/4 tsp (1 mL) each salt & freshly ground black pepper

Instructions

  1. Preheat oven to 400° F (200° C). Spray 8-inch (2 L) square baking dish with PC Blue Menu Canola Oil Cooking Spray.
  2. In zippered plastic bag, crush crackers into coarse crumbs. Add margarine to bag; press until evenly distributed.
  3. Place half of baking potato slices in prepared dish in single layer, overlapping slightly. Sprinkle with 1/3 of green onions. Cover with half of sweet potato slices. Sprinkle with 1/3 of green onions. Sprinkle with half of salt and pepper. Repeat baking potato-green onion- sweet potato layers once. Sprinkle with remaining salt and pepper. Whisk together stock and flour; pour over potatoes. Sprinkle with cracker mixture. Cover dish with foil.
  4. Bake in centre of oven for 50 to 60 minutes or until potatoes are easily pierced with tip of sharp knife. Uncover; bake 10 to 15 minutes longer or until top is golden brown. Let stand 5 minutes before serving.

Chef's Tips

This scalloped potato is unusual as it is lactose-free. Serve it to your lactose-intolerant friends and family members.
