Streusel is German for “sprinkle”. Unusually, the streusel topping for this delectable raspberry bar is the same mixture as the pastry base of the bar.

Ingredients

1 3/4 cups (425 mL) all purpose flour
2 tbsp (25 mL) granulated sugar
Finely grated rind of 1 lemon
1/8 tsp (0.5 mL) salt
1/3 cup (75 mL) cold unsalted butter, cubed
1 egg
1/2 cup (125 mL) PC Organics Fruit Spread - Raspberry

Instructions

  1. Preheat oven to 375°F (190°C). Spray 8-inch square (2 L) metal cake pan with PC Blue Menu Canola Oil Cooking Spray.
  2. In bowl of food processor, combine flour, sugar, lemon rind and salt. Process until combined. Add butter; pulse on and off until mixture forms crumbs. In small bowl, whisk egg with 2 tbsp (25 mL) water; add to flour mixture and pulse on and off just until mixture forms small crumbs. Do nto over process. Fill 3/4 cup (175 mL) measuring cup loosely with mixture and place in refrigerator. Press remaining mixture into bottom of prepared cake pan. Prick all over with fork.
  3. Bake in centre of oven for 15 minutes or until golden. Spread with jam. Sprinkle evenly with chilled pastry mixture. Bake another 15 to 17 minutes or until topping is golden. Cool to room temperature on wire rack.
  4. Cut into nine squares. Serve dusted with icing sugar, if desired.

Chef's Tips

Strawberry Streusel Bars variation: Substitute PC Freezer Strawberry Jam for the raspberry.
