1 PC French Baguette
2 tbsp (25 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
8 slices PC Splendido Part-skim Stretched Mozzarella Cheese
8 slices PC Splendido Prosciutto
1 tomato, cut in 8 slices
1/4 cup (50 mL) chopped fresh basil

Instructions

  1. Preheat sandwich press. Using serrated bread knife, cut baguette into 16 1/2-inch (1 cm) slices, cutting at extreme angle so that each slice is 6 inches (15 cm) long. You will only need about two-thirds of the baguette. Brush one side of baguette slices with oil and place slices on work surface, oiled side down. Cut tomato and cheese slices in half.
  2. Divide prosciutto among eight of baguette slices. Place two half slices of tomato on top of prosciutto. Sprinkle basil over tomato. Place two half slices of cheese on top of basil. Top with remaining 8 slices baguette, oiled side up.
  3. Place two sandwiches on sandwich press and close lid, pressing gently. Grill for 2 to 3 minutes or until sandwiches are grill-marked and crispy. Repeat with remaining sandwiches.

Chef's Tips

Serves 4 as an entrée. Serve with tossed green salad and olives, if desired.
