Pain Perdu with Maple Blueberry Sauce

So-named because it can be made with stale bread that would otherwise be lost (perdu), this dish is a brunch classic. It’s low fat as is, but you can dress it up by serving with whipped cream and fresh strawberries if you like.

2 tbsp (25 mL) unsalted butter
1 PC French Baguette
2 cups (500 mL) PC Organics Canadian Wild Blueberries
1/2 cup (125 mL) PC 100% Pure Maple Syrup
4 PC Blue Menu Oméga-3 Brown Eggs - Large
2/3 cup (150 mL) 10% cream
1 tsp (5 mL) no name Pure Vanilla
1/4 tsp (1 mL) salt


  1. Cut baguette on diagonal into 1/2-inch (1 cm) thick slices. Discard ends. You should have 21 slices. Leave slices on cutting board to dry slightly.
  2. Place a baking sheet in centre of oven and preheat to 200°F (100°C). In saucepan, combine frozen blueberries and maple syrup. Cook over medium-high heat until bubbling, about 8 to 10 minutes. Remove from heat. Cover to hold warm.
  3. In shallow bowl, whisk together cream, eggs, vanilla and salt. Place seven pieces of bread in mixture; turn to thoroughly coat both sides. Meanwhile, in large non-stick frying pan melt 1 tbsp (15 mL) of the butter over medium heat. Remove bread from egg mixture, place in frying pan and cook for about 2 minutes per side or until golden brown. Transfer to baking sheet in oven to hold warm. Repeat with remaining bread, egg mixture and butter. Discard remaining egg mixture.
  4. Pour maple-blueberry sauce into small pitcher. Place 3 slices of pain perdu on each plate and spoon sauce over top. Sprinkle with dusting of icing sugar, if desired.

Chef's Tips

Substitute PC Blue Menu Whole Grain Baguette, if desired.

Use a long electric griddle and cook all the pain perdu at the same time.
