3/4 cup (175 mL) PC MEMORIES OF Szechwan Spicy Peanut Satay Sauce
3 skinless, boneless chicken breasts (about 1 lb/500 g)
1/4 cup (50 mL) whipping cream
1 tbsp (15 mL) lemon juice


  1. Preheat barbecue to medium heat.
  2. Measure out 1/4 cup (50 mL) Memories sauce for basting chicken.
  3. Place chicken on greased grill and baste with some of the sauce. Close lid. Cook for 10 minutes, basting occasionally. Turn chicken and brush with remaining basting sauce. Close lid and cook for 5 minutes longer or until cooked through.
  4. Meanwhile, pour remaining 1/2 cup (125 mL) Memories sauce into small saucepan. Whisk in cream and lemon juice. Bring to a boil over medium-high heat, whisking constantly. Reduce heat to simmer; cook for 2 minutes.
  5. Serve chicken with sauce spooned over top.

Chef's Tips

Using skinless chicken breasts reduces the overall fat and calories in this chicken dish.
