Ingredients

2 PC Blue Menu Garlic & Herb Chicken Skewers
2 tbsp (25 mL) PC Mayonnaise - Made with Whole Eggs
1/3 cup (75 mL) PC Splendido 12-Vegetable Antipasto
2 Greek pita breads
4 romaine lettuce leaves

Instructions

  1. Preheat barbecue to medium heat.
  2. Grill skewers on greased grill for 16 to 18 minutes, turning occasionally.
  3. Meanwhile, grill pita until warm and well-marked on one side. Place grill-marked side down on work surface. Spread half of each pita with mayonnaise; top mayonnaise with lettuce. Spread other half of pitas with antipasto.
  4. Push cooked chicken off skewers; place on top of lettuce, dividing evenly between pitas. Fold in half and serve.

Chef's Tips

Fold this sandwich gently, so as not to split the pita.
