Ingredients

1/3 cup (75 mL) PC Toasted Sesame Vinaigrette
2 tsp (10 mL) finely grated lime rind
2 tbsp (25 mL) fresh lime juice
1 ripe mango, peeled and thinly sliced
1/2 pineapple, peeled, cored and cut in bite-sized pieces
1/2 English cucumber(skin on), cut in half lengthwise then thinly sliced crosswise

Instructions

  1. In large bowl, whisk together vinaigrette, lime rind and juice.
  2. Add mango, pineapple and cucumber; gently toss to coat.

Chef's Tips

You can buy peeled and cored pineapple in the produce section.
