A refreshing and light potato salad perfect to serve with barbecued fare. Not heavy like many mayonnaise-based potato salads.

1 bag (680 g) PC Ruby Little Gems Red Mini Potatoes sliced in half
1/2 cup PC Yogurt Dressing - Tzatziki
1 cup (250 mL) thinly sliced celery
1/4 cup red onion, thinly sliced
1/4 cup chopped fresh dill
3 tbsp (45 mL) chopped fresh mint


  1. Place potatoes in saucepan with cold salted water to cover. Bring to a boil. Reduce heat to simmer. Cook uncovered for 6 to 7 minutes or until potatoes are tender. Drain. Place in refrigerator to cool for 15 to 20 minutes.
  2. In large bowl, combine dressing, celery, red onion, dill and mint. Stir in cooled potatoes.

Chef's Tips

Substitute another PC Little Gem potato.
If desired, soak red onion in cold water for 15 to 20 minutes and drain before using to remove some of harsh onion flavour.
