Potato Apple Latkes
We gave this traditional Jewish dish a sweet twist by adding apple to the usual potato-onion mixture, instead of serving with applesauce later. Yogurt makes a healthier choice than sour cream for dolloping on. We made ours sit-down appetizer size; for passed hors d’oeuvre-size portions, form mixture into thirty-two 1 1/4-inch diameter patties and fry for 2 to 3 minutes per side or until browned and cooked through.

Fiesta Slider
Black bean dip and coriander give our appetizer slider a Mexican feel, perfect with a cold cerveza. You can easily double or triple this recipe to serve a crowd.
-
Hot Bottomless Bean Dip
No one can stop eating this fabulous bean dip! Increase the jalapenos and/or substitute PC Medium Fresh Salsa if you like a lot of spice.

Classic Baked Dip
A warm dip is sure to draw a crowd at any gathering. This smoky version is served in a bread bowl, and gets a nice crunch from water chestnuts in the spinach dip.
-
Guacamole
Always popular, guacamole is a great basic recipe to have in your repertoire. PC Frozen Cilantro makes it a cinch! Although avocado is high in fat, it is heart-healthy monounsaturated fat.

Seared Sea Scallops with Pancetta and Pea Purée
This sophisticated first course will wow your guests.

Piri Piri Shrimp with Avocado Salad
Tossing the shrimp with more piri piri sauce after they come off the grill gives the shrimp an extra kick of flavour. Leaving the shells on keeps the shrimp moist.

Reverse Bruschetta
This bruschetta is reverse because you dip the bread into the topping instead of spooning the topping onto the bread.
