Ingredients

4 PC Blue Menu ancient grains whole grain Tortillas
1/4 cup (50 mL) PC Blue Menu Spicy Black Bean Dip
1/2 cup (125 mL drained PC Blue Menu Peaches & Cream Whole Kernel Corn
1/4 cup (50 mL) shredded part-skim mozzarella cheese

Instructions

1. Place two tortillas flat on work surface. Divide dip between them, spreading evenly. Sprinkle with corn, then cheese. Place other two tortillas on top, pressing down.
2. Heat medium nonstick frying pan sprayed with PC Blue Menu Canola Oil Cooking Spray over medium-high heat. One at a time, cook quesadillas for 2 minutes per side or until golden and cheese melts.

Chef's Tips

PC Chef's Tip:  Serve with a grape tomato and cucumber salad to make it a meal.
