PC 8 Vegetable Cocktail is your short-cut to a fabulous soup, brimming with vegetable flavour. Whole wheat pasta and beans add fibre and make this a meal.

1 tbsp (15 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
2 onions, finely chopped
3 stalks celery, finely chopped
1 bottle (1.89 L) PC 8 Vegetable Cocktail
1 can (540 mL) Bella Tavola White Kidney Beans, rinsed and drained
1/2 tsp (2 mL) freshly ground black pepper
2 cups (500 mL) PC Blue Menu 100% Whole Grain Whole Wheat Rotini
1 pkg (142 g) PC Organics Baby Spinach


  1. In large saucepan, heat oil over medium-high heat; cook onion and celery for 8 minutes or until vegetables are soft. Stir in vegetable cocktail and 3 cups (750 mL) water. Bring to a boil. Stir in beans and pasta. Reduce heat to medium-high. Cook uncovered for 10 minutes or until pasta is tender.
  2. Remove from heat. Stir in pepper and spinach. Serve immediately.
