1 1/2 cups (375 mL) PC Blue Menu 100% Whole Wheat Rotini
1 sweet red pepper, diced
2 stalks celery, diced
2 green onions, finely chopped
1 cup (250 mL) diced extra firm tofu
1 cup (250 mL) no name Whole Kernel Corn
1/3 cup (75 mL) PC Blue Menu MEMORIES OF Szechwan Spicy Peanut Satay Sauce


  1. In saucepan of boiling, salted water, cook rotini for 9 minutes or until tender but firm. Drain. Rinse thoroughly under cold running water. Drain again.
  2. In bowl, combine red pepper, celery, green onions, tofu, corn and Memories sauce. Stir in pasta.


Chef's Tips

Substitute cold cubed cooked chicken for tofu, if you like.

If you make this in the morning, the frozen corn will thaw in time for lunch. Or, make it the night before to speed your morning routine.
