Szechwan Spicy Peanut Sauce combines with a French-style cream sauce to create a dish that’s pure PC!

4 PC Air Chilled Bone-In Chicken Breasts (about 2-1/2 lb or 1.25 kg)
3/4 cup (175 mL) PC MEMORIES OF Szechwan Spicy Peanut Satay Sauce
1/4 cup (50 mL) whipping cream
1 tbsp (15 mL) lemon juice


  1. Preheat BBQ to medium-high.
  2. Measure out 1/4 cup (50 mL) of Memories sauce for basting chicken.
  3. Place chicken skin side up on grill. Baste with some of sauce. Close lid. Cook over medium-high heat for 20 minutes, basting occasionally. Turn chicken. Brush with remaining basting sauce. Cook for 15 minutes longer or until juices run clear when thickest part of chicken is pierced with a skewer.
  4. Meanwhile, pour remaining 1/2 cup (125 mL) of sauce into a saucepan. Whisk in cream and lemon juice. Bring to a boil over medium-high heat; reduce heat to simmer and cook for 2 minutes.
  5. Serve chicken with sauce spooned over top.

Chef's Tips

For easy elegance, serve chicken on a bed of spaghetti, with sauce spooned alongside. Garnish with sweet pepper strips.
