Gorgeous oranges, greens and reds make this a stunning dinner for company. The Madras sauce cooks down to simply coat the fish and vegetables. This one packs some heat.

1 pkg (280 g) PC Blue Menu Wild Mahi Mahi thawed
1 bottle (400 mL) PC Indian Madras Cooking Sauce
2 cups (500 mL) no name Frozen Cut Green Beans
1 small sweet red pepper, thinly sliced


  1. Preheat oven to 425° F (220° C).
  2. In 8-inch (2 L) square glass baking dish, place green beans and red peppers. Place mahi mahi on top of vegetable mixture. Pour sauce over fillets.
  3. Bake uncovered in centre of oven for 20 to 25 minutes or until fish flakes easily when prodded with a fork. Serve with cooked PC Basmati Rice, if desired.

Chef's Tips

Halibut Madras variation: Substitute PC Blue Menu Wild Alaskan Halibut Skinless Fillets, thawed, for mahi mahi.
