Additional Information

4 tbsp (50 mL) PC Blue Menu Celeb Margarine - Original
20 no name Large Marshmallows
3 cups (750 mL) PC Corn Flakes
20 long wooden skewers
1 bar (300 g) PC Milk Chocolate Bar
1-1/2 cups (375 mL) shredded sweetened coconut

  1. Line baking sheet with wax paper.
  2. In saucepan, melt margarine over medium heat. Stir in marshmallows; cook, stirring, until melted. Remove from heat. Stir in corn flakes. Transfer mixture to bowl. Dip hands in cold water and shake dry. Form about 2 tbsp (25 mL) of mixture into a ball, pressing firmly; stick a skewer into it and place on prepared baking sheet. Repeat with remaining mixture, wetting hands occasionally. Makes 20 balls. Chill balls for 30 minutes.
  3. In heatproof bowl set over (not in) saucepan of hot (not boiling) water, melt chocolate. Remove bowl from saucepan. Place coconut in another bowl. One at a time, dip each ball into chocolate, letting excess drip off into bowl, then sprinkle with some coconut and return to baking sheet to set. Discard any remaining chocolate and coconut.

Chef's Tips

Variation: Instead of forming into balls and skewering, press cornflake mixture into a parchment paper-lined 8-inch (2 L) square metal cake pan. Spread melted chocolate over cornflake mixture and sprinkle with coconut. Chill, then cut into small squares.
